For 12 cakes you will need:


500 g low-fat cottage cheese, 2 eggs, 3 tablespoons sugar, 4 tablespoons flour, 1/2 teaspoon of vanilla essence, a pinch of salt, a handful of raisins, dried cherries, fresh berries or frozen berries, if desired.




Preheat oven to 180° C. RUB the eggs with sugar. Add the cheese, flour and baking powder and mix well. If you decided to use dried fruit or berries, mix them, trying not to crush the berries. Cupcake tins butter and place the dough. Bake in preheated oven for 35-40 minutes or until the middle is not baked through and the cake is not browned.




Try replacing the usual mayonnaise or oil more interesting "spreads" - such as cream cheese with herbs or hummus. Hummus is milled chickpea with different additives. For a quick and healthy snack spread hummus inside the pita and fill Peet different vegetables.





Hummus


2 tablespoons olive oil, 2 tablespoons water, 2 finely chopped cloves of garlic, 2 tablespoons lemon juice 1 teaspoon ground cumin (cumin), 500 g of boiled peas, salt, black pepper to taste.





Possible additives:


2 tablespoons tahini;


1 roasted pepper;


a handful of dried tomatoes;


1-2 cloves of roasted garlic.




In the bowl of a food processor put all the ingredients and blend until smooth. Prepared hummus can be stored in the refrigerator for one week. This is a great replacement for butter and mayonnaise sandwiches.


If your children are already tired of sandwiches, try to diversify their everyday life rolls of bread. For the filling, you can take any meats, cheese and vegetables. Bread is a good way to use left after lunch meat or chicken for a snack the next day.





Tortilla with chicken salad


For 2 servings you will need:




300 g of boiled chicken, 1 small Apple, 60 g walnuts, 50 g raisins, dried cranberries or dried cherries, half avocado, 2 tablespoons mayonnaise, 2 tablespoons unsweetened yogurt or sour cream, salt, black pepper, 2 tortillas or other flat bread with a diameter of 20-25 cm




Chicken and Apple cut into cubes. The nuts are finely chopped. Mix all the ingredients. Pellet heat for 15 seconds in the microwave to make them softer. Evenly divide the salad between two cakes, put it closer to the bottom half, and tightly roll up the tortilla. This recipe does not require any dressing - no oil, no mayonnaise. Gentle puree avocado perfectly fulfils this role and fills the dish with vitamins and beneficial trace elements.





Cake in California

For 2 servings you will need:


4 thin slices of bacon or lean smoked ham, 1 avocado, 1 medium tomato, 1/3 red onion, 1 tsp. lemon juice, 200 g of prepared chicken or Turkey breast, 50-60 g of lettuce, salt, black pepper, 2 tortillas or other flat bread with a diameter of 20-25 cm




Bacon finely chop. Preheat the pan on medium heat and fry the bacon until it is browned and crisp. With a slotted spoon to remove it from the pan and place on paper towel to stack the excess fat.




All the vegetables and the meat cut into small cubes. Mix the vegetables, bacon, chicken and lemon juice. Add salt and pepper to taste. Pellet heat for 15 seconds in the microwave to make them softer. Lay the lettuce on the bread, spread over salad and tightly roll.
