Pistachio ice cream


Pistachio ice creamAnnually in the world are sold billions of gallons of ice cream and its popularity is growing every day. Today we will tell You about how to cook the world-famous pistachio ice cream.



Ingredients:


120 g of purified crushed pistachios


- 3 cups milk


- 2 cups cream


- 4 egg yolks


- vanilla sugar


- 2, 5 glasses of crystal sugar


- a few drops of almond essence


- 2-3 tbsp rosewater


green caramel (optional)





Method of preparation:


Grind pistachios in flour, add milk and cream. Heat the mixture in the saucepan and leave to simmer for 5 minutes.




In a large bowl, whisk the yolks, sugar glaze and vanilla sugar in a lush lather. Gradually pour hot mixture in a thin stream through a fine strainer into a bowl of whipped egg yolks, continuing to beat.




Pour back into the saucepan, bring to the boil and as soon as you see the first bubbles, remove from heat. Continue whisking until the mixture until it cools.




Add rose water, almond essence and caramel. Place the milk mixture into the machine for ice cream or in the freezer, but in this case, do not forget to stir 3-4 times before the ice cream hardens.
