Dutch research company Nizo has developed a way to reduce the amount of sugar, salt and fat in foods without compromising taste. To fool the taste buds turned out to be easy, if you use the sense of smell.
As shown by the experiments, different scents enhance or mask the taste. For example, fresh, sour smell reduces the sensitivity to sweet, and the food seems to be less sweet than the same, but with a neutral odour. Butter, cream or caramel aroma makes you assume the dish is more fatty and sweet than it actually is.
Empirically, scientists have identified and aroma to reduce the amount of salt without sacrificing taste. To talk about the wide use of artificial fragrances as a means of combating obesity is still early. In the foreseeable future they will be used traditionally to stimulate the appetite.
