Again tested red caviar...



Center independent expertise "Test" in September of this godpower another test of caviar sold in Ukraine. For this test, we selected 9 brands. Testing caviar passed by the classical scheme: assessment marking and packing, checking of the product in the laboratory, as well as the evaluation of sensory characteristics of the product.



Labeling and packaging


Packaging caviar pleasantly surprised: all jars have the key for easy opening. But to labeling comments were. So, on the product label "Island", "Dalmore", "Russian Ambassador" and "F." not marked fish, which are taken caviar. But this is a fundamentally important point that affects the taste of the features and price of the product. The concept of salmon caviar implies that it was taken from the fish of the salmon family: chum salmon, pink salmon, sockeye salmon, trout, etc.
The eggs ACC marking suffered terribly small print in black on a dark green background - the result is never read. For such a mockery of the consumer labeling of this product is reduced to "bad". Small font caviar "Dalmore" and "the Island", but still better than the "ACC".





Laboratory tests



In laboratory studies caviar checked the net weight and the content of preservatives. Underweight is one of the oldest and most common ways of rigging. For caviar this is especially true in view of its considerable cost. Permissible deviation of the net mass in the lower side is 3%. In this rule, "met" all 9 samples, although the "Island", "the Bay" and "Cocktail" was on the verge of this norm.
As for preservatives, last checked in two of the samples were recorded in excess of their content in the product. This time cost and the number of urotropine, and the amount of sorbic acid did not exceed the prescribed 0, 1% for each substance. A bit strange that the caviar Russian Ambassador was not detected in addition to these two preservatives are also "promised" sodium benzoate. This third preservative was also tested in all samples, just in case, but found in the caviar was not.


As a result of physico-chemical parameters of caviar observations were not available, and the deciding factor when deriving the overall scores was organoleptic.





Organoleptic evaluation



Requirements for sensory characteristics of eggs following. Externally, the eggs must be clean, unbroken, uniform in color, without films. The slight quantity of shell eggs-lapanta. As for consistency, the most attractive elastic caviar, in which the eggs are separated from each other (rasborinae). To prevent sticking of the eggs to the eggs add the sunflower oil. Smell and taste should be enjoyable inherent in the eggs of fish, possible weak taste bitterness, for example, for sockeye.
If you talk about the features of the eggs of various fish, under the traditional understanding of the consumer "red caviar" gets caviar pink and chum salmon: it is color orange rather than red, large eggs, bitter aftertaste is almost absent. The color of the eggs of sockeye salmon - red, bright red. The taste of salmon ROE has natural bitterness. Caviar trout compared to other stands out more dense shell eggs. Evaluation of organoleptic indicators of caviar, as well as comments given in the table (see table).





Price and quality



As for the price of caviar, in view of the fact that jars of caviar different masses (and this is 130g and 120g), compared the cost of 100g of product. This year the price of 100g of product ranges from GM. to GM. An important conclusion of the test: there is a clear dependence of the rates of eggs from its quality: the more expensive caviar - the better it is.
The most affordable sample caviar "ACC" (36, 55 UAH per 100g) received only a score of "satisfactory". Assessment and caviar "Aniva".


The overall score of "good" red caviar "Furshet", "Russian Ambassador", "Dalmore" and "Island".


"Standouts" on test results this year three: "Kamchatka man", "Barge" and "Flagman".


In General, the test results were positive: in spite of all suspicion, quality caviar in Ukraine is still there. And most importantly, testing the well-known brands, we already that year convinced of the stability of their high quality.
