Experts say that phenolic components of olive oil are changing the expression of a large number of genes in the cells. These results want to be treated with some skepticism, but they are obtained in the high-tech research and published in the journal BioMed Central Genomics.
The experiment involved 20 patients with so-called metabolic syndrome: this condition is characterized by obesity, hypertension and insulin resistance - it is prediabetes, but not yet diabetes. Subjects during the day before the survey were asked to adhere to the same diet, and then they proposed an experimental Breakfast, consisting of 60 grams of white bread with 40 milliliters of olive oil cold pressed.
Among the changed work 39 genes involved in cellular inflammation. Of these 35 genes under the action of phenols in olive oil reduce its work, and four increase. The result of reduced activity of several groups of genes is reducing inflammation and protecting the walls of blood vessels.
