Pea soup with bacon


Pea soup with baconComing home after a hard day, often want to eat something delicious, healthy and hearty. But usually on long cooking has neither the strength nor the desire. This soup in such cases, a real magic wand. As he prepares literally within minutes, and the result ensures a real pleasure!


Ingredients:


- 200 ml of crushed green peas
- 1 large carrot


- 1 large onion


- 1 large potato


- 70 g smoked bacon


- 30 g of fresh herbs (dill, parsley, green onions)


- olive oil


- pepper


- Sol





Method of preparation:


Peas, rinse, put in a two-liter pot and pour 400 ml of water. Bring water to a boil, reduce the heat to medium and loosely cover the lid: the liquid must constantly barely simmer, but not boil.




Finely chop the onion and sauté for about 5 minutes in olive oil in skillet, stirring occasionally. At this time, peel the carrot and cut it into small cubes, then add to the onions and stir. Cover tightly with a lid and reduce the heat to a minimum: to cook the vegetables for about 25 minutes, stirring occasionally.




Potatoes wash, peel, cut into cubes of side 1 cm and about to add to the pot: how time will be about 20 minutes from the beginning of cooking peas. Pour 200 ml of boiling water, stir and continue to cook, covered with lid.




Preheat the pan, reduce the heat and fry the bacon in olive oil, stirring occasionally. After about 5 minutes, remove the pan from the heat. After half an hour from the beginning of cooking the soup, add to the pan braised carrots with onions, bacon, fresh herbs (pre-washed and finely chopped) - dill, parsley, green onions. Add 700-800 ml of boiling water, season with salt and pepper to taste and mix well. Cover with lid and leave on low heat for another 5 minutes. The soup is ready to serve!
