Tasty and quick soup, the preparation of which takes 20 minutes.
Ingredients:
- 1 medium onion, finely chopped
- 1 carrot, grated
- 2 cloves garlic, finely chopped
- 3 cups dusty or vegetable broth
- 500g of broccoli inflorescences
- 2.5 cups 2% milk
- 1/3 Cup flour
- 1/4 tsp. black pepper
- 226 g of cheddar or other sharp, good melting cheese, grated
- salt to taste -
Method of preparation:
In a saucepan, heat 1-2 tsp. of vegetable oil on medium-high heat. Add the onions, carrots and garlic and cook for 3 minutes or until the vegetables are soft. Add the broth and broccoli. Bring to boil, reduce heat to medium and simmer for 10 minutes.
In a separate bowl, mix the flour with the milk. Add the milk mixture in the saucepan. Simmer for 5 minutes or until the soup slightly thickens, stirring constantly. After adding the milk, do not let the soup boil. Add the peppers and stir. Remove soup from heat, add cheese and stir until cheese melts.
Pour 1/3 of the soup in the bowl of a blender or food processor and Porirua. You can blend the whole soup or nothing at all to blend. Return mashed soup to the pan, stir well and serve.
