Puff Bugnion


Puff BugnionAfter the movie "Julie and Julia. Prepare happiness prescription" many Housewives rushed to search for the recipe intriguing "puff Bugnion". To the surprise of many it was this dish, such as beef Bourguignon (FR. Boeuf bourguignon) - the dish is a long but fairly easy and very tasty.


Ingredients:




- 250 g small mushrooms

- 80 g bacon (smoked brisket)


- 1 tablespoon tomato paste


- 2 tbsp. flour


- 350 ml of dry red wine of good quality


- 500 ml chicken broth


- 1 Bay leaf


- 1 garlic clove


- 3-4 medium carrots


- 100 g pearl onions (onion) - if you want to replace the usual onion, cut into large cubes


- 30 g butter


- salt and pepper to taste


oil for frying




Method of preparation:




Mushrooms fry in vegetable oil in a large saucepan until Golden brown, about 8-10 minutes. Place them on a plate.




The meat is cut into cubes with sides about 2, 5 see Promotive dry with paper towels, sprinkle with salt and pepper to taste, fry over high heat in a few rounds on all sides until Golden brown, 2-3 minutes per batch. Place them on a separate plate.




Bacon cut into thin strips. Remove from the pan almost all the oil, just reduce the heat, put the bacon and fry, stirring occasionally, until bacon is browned, about 5 minutes.




Add the tomato paste and fry, stirring, 30 seconds. Add the flour and fry, stirring, for another 30 seconds.




Return to the saucepan of beef, pour the wine, broth, put the Bay leaf and crushed garlic, mix well. Bring to a boil, cover with a lid and transfer to a preheated 160 degree oven. Simmer about 1 hour.




After this time, the carrot cut into pieces of medium size.




Put in a pan to the meat along with the onions, stir and again send it to the oven. Simmer until the meat is soft and tender. It will take about 1, 5-2 hours depending on the meat.




15 minutes until cooked add in the hot mushrooms.
