The Chicken Mexicali
Recipe for 6 servings. Cooking time - 40 minutes.
Set of products.
2 tbsp sunflower oil, 1 chopped onion medium size; 1 small chopped green chilli (no seeds); 1 finely chopped clove of garlic; 2 tablespoons tomato paste 1 tsp. ground cumin; 1 tablespoon finely chopped fresh coriander; 250 g ready red beans; 500 g blanshirovannuyu cleaned from skin and sliced tomatoes; 500 g cooked chicken; salt; pepper; boiled rice or wheat tortillas; green salad for decoration.
Cooking method.
Heat the vegetable oil in a heavy-bottomed saucepan and cook it at medium heat the onion, chilli and garlic for 4-5 minutes until, until the onion is soft but not Golden.
Add, stirring, tomato paste, cumin, coriander, beans, tomatoes and chicken, season with salt and pepper. Cover and simmer for 20 minutes until thick. If necessary, open the lid and cook for another 10 minutes.
Serve with boiled rice or tortillas and salad.
