Apricots with yogurt


Apricots with yogurtBegan apricot. The first apricots of the most juicy and delicious and because it is a sin not to take advantage of this grace and not to cook something delicious.



Ingredients:


- 1 Cup sugar


- 300 g of natural yoghurt


- 1 kg apricots


- a handful of peeled pistachios


- polgardi pine nuts





Method of preparation:


At the bottom of the bowl lay a few layers of cheesecloth, pour down a thick yogurt, tie top with cheesecloth into a knot and hang the yogurt for 3-4 hours over a bowl in the fridge, so to drain all excess liquid.




While yogurt "become empty," cook apricots: wash and remove the seeds.




Take a pot of this size, to fit apricots. Pour in 0, 5 liters of water and a Cup of sugar and, stirring, bring to a boil.




After boiling, put the apricots in the water and simmer for 5 minutes, stirring occasionally.




Remove the apricots through a sieve, but the syrup does not turn off - let it to be cook down by half.




Then place the apricots in a saucepan, add the nuts and cook for another 2 minutes on slow fire.




When apricots are cool, and the yogurt will thicken, put the fruit in a beautiful bowl liberally drizzle with syrup and serve with yogurt.
